Whole 30 Recipes

So the other day I gave you pictures and descriptions of what I’m eating.  How about I share a few that I love?

Paleo Granola

So one thing I was missing (not craving or causing unhealthy food associations) is something crunchy.  I found this recipe for granola using nuts, seeds, coconut, and cacao nibs.  Exactly what I wanted.

Anna’s notes: I used almonds, raw cashews, raw sunflower seeds, raw pumpkin seeds.  I roasted longer than the recipe said to get a better toasting on everything. Probably cooked it a total of 1 hour, stirring every 10 minutes.

Beef Chili

This was inspired by a Whole 30 recipe in the book.  Didn’t follow it exactly.

1 can fire roasted tomatoes

1 lb ground beef

1 package beef stew meat

1 cup beef broth

3 TBl of my chili mix.

I used my instant pot but you could do this on the stove or slow cooker.  I browned all the meat with salt, pepper and garlic.  Dumped in my liquids and my chili mix.  Cooked on manual at high pressure for 35 minutes and did a natural release for 20 min.  Opened my pot and stirred.  Turned out great.  Now you may also ask what is in my chili mix.  I have that recipe too.

Anna’s Chili Mix

Dump all the spices into a container and shake.

This turned out great.  I used dill as my herb and it was perfect for me.
