Getting a head start on my week

I’ve got my lunches done for the week. We cooked a bunch of chicken in the crockpot (other than my kitchen aide mixer it’s my favorite appliance). So I took 1/2 of it and made my favorite – chicken salad. It’s topped with fresh tomatoes, mushrooms and spring mix of lettuce/spinach. I also made hard cooked eggs (in the oven) and I have Colby cheese cubes. I also made peanut butter breakfast bars so this week food-wise should be a piece of cake. I will post a few recipes except the chicken salad that’s my sister’s recipe and I’m not sharing. 🙂
